After half my flight today semi-ruined by not connecting (got some drool-worthy shots anyway) I may have found a workaround I could actually survive with. Granted, I've only tested it twice now, but ...
Switch camera to HD mode. System will "lock" and connect.
Then switch back to 4K mode. System stays locked in.
Shoot cool video instead of seeing framing and exposure 2 seconds out of every 30 ...
I'm about to test this for the third time. I'll be testing it a lot in the immediate future.
Sure wish I had thought of it earlier today .. .I could cry, thinking of the epicness I missed because I could not control the camera.
I still hate DJI. Funny, I think of the "DJI Go" app as "DJI Go ---- ----------!" but I would not say such a think in polite society.

Do you have the option of switching from 2Ghz band to 5Ghz band via the app on that thing?, It's a long shot but 2.4Ghz is crowded, 5Ghz is shorter range but less crowded, a lot of these new cars that have the wifi hotspots running also run in the 2.4G band.

I'd also try setting it to clear cache and try without, long delay connecting is one thing but this sounds to me like something is getting interrupted (signal) or buffer overrun. I also wonder about transmitter power and receive antennas....any bad design there will provide for lots of grey hair.....been there on that one.

It's not the band ... .out here, there is nothing to compete. It is something to do with the processing handshake via the USB between the controller and tablet. Happens on iPad 2 Mini, NVidia Shield, and Galaxy S7 ... so it's likely not just a "low performing device" as been hinted at by defensive DJI reps ... only solution at this point is to switch over to HD, let it "lock on" then switch to 4K. Tested that many many times since last night, and it's reliable workaround. Once it locks on, it stays put.

You are right that is one buggy software/app, an update did come down the line last week and it's 100% improved at least on my end and on the S7 Edge, there was also an Android firmware update as well. Doesn't lock up much anymore or crash the phone and the video quality on the phone seems better. There were two updates and the latest one brought improvements for me.
I am one of those that updates software and firmware the second an update is released, only been burned once.
The one software that's been having a bit of fun with me is my security software on my Asus laptop, the new edition has ransomware protection and of course I set everything to the highest level, don't want to take chances these days and that very software prevented me from making some changes to some other software I used for radio systems monitoring....basically it was protecting me from myself but didn't tell me until I tried to save four hours worth of work and wiped it all out.

Be careful on quick updates on DJI. They released an update on the Vision 2+ and it instantly fried hundred or maybe thousands of wifi transmitters. The forums are full of this issue yet DJI denies that any wifi modules have failed. It costs $200 for a new one and the machine really isn;t worth that much anymore. Let others test DJI updates for a couple weeks and check the forums close for problems.

I own a lot of DJI products for professional use and, aside from some of them, I have to say the majority doesn't deliver. Remember, DJI is a Chinese brand... And it sells and develops gadgets which use experimental technology.
They will always put price and simplicity before quality. I don't recommend any DJI product for reliable/safe/serious use, except maybe for the Naza/Wookong controller.
Also, their technical assistance is nonexistent.

My DJI Osmo+ has improved a lot after a couple of firmware and software upgrades.....getting it to boot up requires certain buttons be pushed in a certain order on the unit and phone and that I think changed after the last update but once I drilled everything into my head it's second nature now, did it in the blizzard today in Muskoka and no issues. It's like acetylene torch....A before O or........? :)

I have only ever owned the Phantom 4 but mine has been rock solid. Never a single issue. My walkera before was a nightmare every time I flew it. I will most likely upgrade to the phantom 4 pro sometime this year.

Wait til after NAB, I'd guess Phantom 5 will be announced. It made no sense to make all the upgrades to the P4P and still call it a "4". Five will be out within a few months.

Yeah, I won't do any upgrade with the Phantom till the later part of the year.
