As the title says I wonder if it's better to zoom in either in the cam or do it later in the video editor?
Does it matter?

Yes. Do it in cam. Better.
If you do it in post (not DAW, not audio) you lose resolution. You can, of course, shoot 4K or other large resolutions and simulate a zoom in post, I have and will (usually with large res timelapses) but then usually end up outputting HD if you want to be honest about it. Also the relationship between the lens and the sensor changes in different dynamic ways when you zoom in camera. This is obviously different than doing the "Burns Effect" as if you did it in post. Same with pans and tilts, for that matter.
Of course it's relative. Very small zooms, pans, tilts in post have no real negative effect, and can work very well. Ask WHY you are doing it though. A buyer of a clip can always do that to a static shot if they want, but they cannot undo it.
