I'm a new content provider.
Is it advisable to shoot S-log and submit the non-coloured files to give the end user the most flexibility, or shoot an easier code that doesn't need to be colour corrected?

I'd never shoot s-log for stock but I do shoot a flat profile in my A7SII and C300
From your post, I guess you're thinking of submitting right out of camera without any editing?
But I always color correct and enhance. The end user most of the time doesn't have time or doesn't want to be bothered with grading the footage.
You have to ask yourself, do you ever see flat stock photos for sale? The answer to that is no.
Why would it be different for video?
Once I tried to see if people wanted flat video and submitted some of those. While they sell a little, the video I edit for content and color grade sells many times that of the flat video.
But of course it's your work.
