I think we should all put money, hire a group of young hardware enthusiasts to build us a full frame camera. There are various sources for sensors and accompanying electronics. I know at least two such projects, one of them being Apertus. The only problem si that they are using a small size sensor.

'Full frame' on a video camera isn't necessarily always an advantage. Crop sensors are actually a lot closer to 35mm cine frame size (remember cine cameras pass film through from top to bottom exposing 'vertical' frames.

You are partially right: a bigger sensor it is not an advantage in terms of similarity/resemblance but has certain advantages such as gathering more light and a shallower depth of field. On the other hand, a smaller sensor requires smaller lens that is cheaper.

shallow depth of field is not always an advantage either. You don't always want a shallow depth of field but may be stuck with it and the difficulties in focussing it entails. Arguable because of a larger sensor's better low light capabilities you may be able to negate that problem by being able to stop down a bit more.

For a long focal lens, yes, shallower depth of field becomes a problem. It is the wider range of lens(mostly under 24mm) that benefits.
