Some may find it easy but our experience was the opposite -- it took us five days to manage, prepare and print the menus and it was also quite expensive. It cost us about 11.000 Crowns (400 euros) and I am sure that some restaurants have much more complicated menus and there must have been a very difficult change." The cook works ad hoc, preparing an absolutely new fantasy recipe. How we will penalize than, when controls come? In those cases, of course we don't have a list of allergens the meal contains." VARIOUS OF CHEFS WORKING IN KITCHEN (SOUNDBITE) (Czech) "U ZLATE STUDNE" RESTAURANT MANAGER, MICHAL MOTYCKA, SAYING: "Of course there are restaurants, where the staff do not know, what the meals contain, which allergens are present. From this point of view this is right and we agree with it. But on the other side it was very demanding for the restaurants. We will get used to the habit, of course, but I think the officials should have talked to us - with restaurants, hotels and associations." They list 14 categories and in every meal is some allergen. This ties our hands very much. It seems to me that the responsibility of people who have some (allergic) problems was moved to our side and we will be those who will be harshly criticised when there will be some problem." Lot of extreme allergens are missing from the list -- like for example honey and exotic fruits like pineapple or strawberries which can cause immediate problems.
