When rendering in QT, inside this window, click on "Extented" or "Expand", white window pop up, At Codes setting click "Choice", then you have many thing to choose from. Compression type, fps, and under is "Compressor", there you can move the scale "Quality", set 80-90% as you like.
Experiment do no harm, try and fail is normal. Click to all buttons to experiment for yourself. Remember you don't need a expensive program (Adobe or Sony family) to do just cut and render. The most simple program is the best for P5, except you want to be a director or editor.. When you make some money you can upgrade software/hardware as your cheap program has pay off already.

File - Export Movie - Video As Quicktime Movie - then there is no "extended" or "expand" option. I click on "Advanced" and it gives me options for resolution. I click on MPEG4 compression settings and get a quality slider bar, not a %. I can slide up to 94. The next and last step is "best"
So why when a cut down edit from the original uncompressed, highest quality file that is 66MB does it render at 90 (quality) in QT and turns into a huge 236MB file ?

Which version you downloaded? I have a German version 2013, so "Advance" means "Expand"
I have Quality: Minimum, low, middle, high and best, and all between this I can slide too, no problem. (Did you try to move slider in between high and best, then you see percentage number)
That is normal Mov mp4, it is a big file, that is. When lower quality, file size is smaller. Why not try MOV h264? It is smallest file and good quality too, although many artists will not agree with me.

I have the UK version. Yes, I can slide the bar to get 94% between high and best.
But why is the rendered file far far larger than the source ?

In almost every case the final processed footage will be larger than the original source / codex. Welcome to footage.

It still doesn't make sense that something 66MB turns into 270MB by slight reduction in quality. And if this is to be the norm how on earth am I going to keep it all on my hard drive. Only a few files and it will be full. If only we can upload straight from camera :-(
