It's quite simple on a 5DII: go to Menu>Settings> and from the drop down menu choose 24, 25, 30, 60, 120, 1200 FPS or whatever suits your needs.

OH! I totally missed that option. I ended up shooting milk droplets falling into a bowl of cereal at 1000 fps. Totally amazing at 1080p. I am glad they put that new update out.

Also Scott, just FYI HD is 1920 by 1080... I do every thing in 30 FPS, but Dave has a good idea about being unique so maybe I will change my HD to 1921 by 1081
